Banana Cake

Ingredients:
Oil: 1/2 cup
Sugar: 1/2 cup
Flour: 1 cup
Baking powder: 1 tsp
Eggs: 2
Banana: 3
Lemon Juice: 1 tsp
Walnut: 1/2 cup
Vanilla essence: 4 drops

Method:
Grease and line a tin. Cut bananas into pieces. Put bananas and sugar in a bowl and beat it for 15 minutes. Add the eggs one by one and beat well and leave for a while. Sieve the flour thrice and add baking powder in it.Now add flour into egg mixture gradually and beat well. Pour oil in it .Add vanilla essence. Pour the mixture into the prepared tin, sprinkle with a tablespoon of sugar to give a crunch topping if liked. Bake at 120 C fan oven (or 170 C regular, Gas mark 3) for 35 mins, until a skewer comes out clean. Leave to cool and enjoy!
