Zarda

Ingredients:
Salla Rice: 1 k.g 
Yellow,Red and Green Food Color 
Deshi Ghee: 3/4 cup 
Dry fruits: Raisins (Kishmish), Pistachio (Pistay), Almonds (Badam),Asraffi: 1 cup
Cloves (laung): 6 
Green cardamom (Chhoti Ilaichi): 8-10 
Kewra essence: few drops 
Lemon Juice: 2 
Rus Gulle: 8-10
Khoya: 1/2 cup
Sugar: 1 k.g (Make a sheera of sugar with 2 glass of water , 2 cloves ,4 green cardamon,dry fruits,asraffi ) 

Method:
Soak the rice for at least an hour. When the rice is almost cooked then drain. Then in ghee add rest of the cloves and ilaichi and fry on low heat. Add the well drained rice and sheera . Mix well. Cover and cook for a few minutes on low heat. Then sprinkle lemon juice ,add khoya and dry fruits.Make 3 different colours in 3 diff spatualla and make 3 diff circle on rice.Cook for 10 minutes . Mix and before removing from heat add kewra.Serve it with rus gullas.
